Your kitchen is not our kitchen
The recipes here are written to be clear and dependable, yet your batch will not match ours exactly. Flour absorbs water differently, a gas ring is not an induction hob, an oven runs hot or cool, and altitude changes boiling and frying. Treat the times and amounts as a sound place to begin and trust what you see in the pan.
Handling food safely is up to you
Recipes that involve raw meat, poultry, eggs, dairy or deep frying carry notes on safe internal temperatures and how long leftovers keep. Those notes are given in good faith. At your stove, though, you decide whether an ingredient is fresh enough, whether poultry and meat have cooked through, and whether something should go in the bin because you suspect it has turned.
Nothing here suggests reusing frying oil unsafely: heating it again and again beyond its smoke point, topping up old oil with fresh forever, or keeping it badly stored.
This is not health advice
Mamiagency offers no medical, dietary or nutritional guidance. It publishes no calorie figures, and it does not say that any ingredient treats, prevents or cures a condition. If you live with an allergy, an intolerance or a diet-related medical issue, speak to a qualified professional and read every ingredient label before you cook or eat a dish.
History and regional claims
The background given for each dish has been researched with care, but food history is often passed on by word of mouth and can be disputed or patchy. When something is uncertain or argued over, the page tries to say that and not pass it off as fact.
